Recipe of the Month: Keralan Paccha Mackerel
14th March 2019Keralan Paccha Mackerel with Mango and Chilli Salsa
I chose to share this recipe because the first time I tried it was on my chef -led tours to Kerala and I was completely amazed by the quote un usual combination of fresh herbs like mint and coriander, spices and fish. It worked really well. So, every time I make this fish or share the recipe it takes me back to my Spice Circuit Tour memories in Kerala.
Also this is a very easy, quick and healthy dish to prepare at home with very few ingredients.
Ingredients
Whole Mackerel- 4 (125gm each)
Fresh Coriander- 1 bunch
Fresh Mint leaves- 1 bunch
Ginger- 50gm
Garlic- 6 cloves
Green Chillies- 4
Salt- to taste
Lime Juice- 50ml
Coconut oil- 50ml
Method
Clean, cut and score each side of the mackerel about 4 times.
blend all the ingredients above into a thick paste and rub it into the fish on both sides.
Bake them in a pre heated oven at 180 degrees for 6 minutes
Serve with mango chilli salsa spooned over it and some fresh coriander as garnish
Mango chilli salsa
Ripe Mango- 1/2 of it chop into small dices and add 2tbsp of mango puree if mango is not ripe enough.
Shallots- 50gm – chopped
Red Chilli- 1- Fine chop
Coriander leaves- 2 stalks- chop
salt – to taste
chop all the ingredients and add to the mango pulp. spoon it over mackerel or serve it on side
