Recipe of the Month: Sugar Free Banana Bread

Paleo & Whole30 friendly banana bread. A most delicious sugar and grain free banana bread, perfect afternoon pick-me-up.

Ingredients

• 4 Bananas, mashed

• 4 Large eggs, beaten

• 2 tsp Vanilla extract

• 1/4 cup Melted Ghee

• 1 3/4 cup Ground almonds

• 1/2 cup Coconut flour

• 1/4 cup Coconut nectar blossom sugar

• 1 tsp Baking soda

• 1 tsp Ground cinnamon

• 1/4 tsp Salt

• 1/8 cup Poppy seeds

• I Banana, sliced (to top)

Instructions

1.Pre-heat oven to 180c/325f.

2.Grease and line a 1lb loaf tin.

3.In a large bowl mix together the mashed banana, melted and cooled ghee and vanilla extract.

4.In another bowl mix together the ground almonds, coconut flour, baking soda, cinnamon, salt and poppy seeds.

5.Add the dry ingredients to the wet ingredients and then add the poppy seeds to this.

6.Mix together, but don’t over mix! Just mixed is what you’re aiming for.

7.Pour the batter into the prepared loaf tin.

8.Top the mix with the sliced banana.

9.Bake in the pre-heated oven for 55 – 60 minutes. Testing the banana bread with a skewer, it should come out clean. Cool on a wire rack, removing the banana bread from the loaf tin after 15 minutes.

Slice once cooled and enjoy!
